Ingredients for 2 servings

1/4 cup finely chopped onion

1 small finely chopped red bell pepper

3-4 cloves of minced garlic

2-3 tablespoons olive oil

1 cup arborio rice

3 cups stock (vegetable or chicken is preferred)

1/2 cup wine (red or white, I had white on hand this day)

a generous 1/3 cup grated parmesan cheese

1 cup pumpkin puree

salt and pepper to taste

a few chopped scallions for garnish
