free range boneless skinless chicken breast
3 tbsps wine vinegar
1/4 cup diced red onion
1/4 cup red bell pepper
1/4 cup sweet pepper
1 tbsp chopped chipolte
2 tbsps extra virgin olive oil
2 stalks green onions
Cut up thawed chicken breast and place in bowl
Squeeze the 4 limes over chicken and place limes in bowl with chicken
Pour in olive oil and wine vinegar into bowl and cover
Refrigerate for 1 hour
Warm up frying pan and pull lime quarters out of bowl. Poor contents of bowl into frying pan
Cook on medium heat for 10 minutes (time may vary based on strength of cooking surface)
When chicken is close to cooked thoroughly, put onions and peppers into pan and stir.
Cook for an additional 5 minutes on low/ medium heat.
Cut up green onions over finished product for garnish.
