Ingredients for 15 servings

5 cups water

½ package saffron powder

2 cups arborio rice (cooked until just done, not overcooked)

salt, to taste

¼ cup extra-virgin olive oil

½ Small onion, finely chopped

1 Clove of garlic, minced

1 pound of ground beef (drain excessive fat from meat out before adding tomato sauce or paste)

1½ cups of left over homemade Bolognese or marinara sauce

2 Tbsp tomato paste (for rich color to meat)

salt and pepper to taste

3 Tbsp of olive oil

¼ Small onion, finely chopped

1 cup of Frozen peas

salt and pepper, to taste

1 carton of 8 ounces fresh mozzarella cheese pearls, drained

4-6 Eggs (depending on texture of chilled rice)

2 cups grated Parmigiano Reggiano cheese

salt and pepper

4 Cups of bread crumbs

vegetable oil, for deep frying
