Ingredients for 15 servings

5 cups water

½ package saffron powder

2 cups Arborio rice (cooked until just done, not overcooked)

Salt, to taste

¼ cup extra-virgin olive oil

½ Small Onion, finely chopped

1 Clove of Garlic, minced

1 pound of Ground Beef (drain excessive fat from meat out before adding tomato sauce or paste)

1½ cups of left over homemade Bolognese or Marinara sauce

2 Tbsp tomato paste (for rich color to meat)

Salt and Pepper to taste

3 Tbsp of Olive Oil

¼ Small Onion, finely chopped

1 cup of Frozen Peas

Salt and Pepper, to taste

1 carton of 8 ounces fresh mozzarella cheese pearls, drained

4-6 Eggs (depending on texture of chilled rice)

2 cups grated Parmigiano Reggiano cheese

Salt and pepper

4 Cups of Bread Crumbs

Vegetable Oil, for deep frying
