and here Turkey is not popular (or can say we have not use it in our food)...so, we use chicken (Gai means chicken... Tom means soup) :)

I understand how difficult to get the Thai local ingredient when I were abroad... so, it is very good and fun to try to adapt... I will try to use ginger to cook this dish too ... would like to know how it is :) But you did exactly same method as us :) Thanks for Like Thai food :)

Galangal isn't the easiest thing to find but I'll definitely try it in this recipe if I can. Thanks!

it's really easy recipe... my mom always cook this at home and I love it. In Thailand, we use galangal instead of ginger. Ka is Thai word which means galangal :) You can put fresh chillies if you want and cook this dish as a soup and have with jasmine rice... :)

Ingredients for 2 servings

250 g of cooked turkey

100 g of rice noodles

400 ml of coconut milk

350 ml of chicken stock

Juice of 1 lime

1 large thumbsized piece of ginger

1 red chilli, finely chopped

6 spring onions, finely sliced

1 stalk of lemongrass, finely chopped

3 kaffir lime leaves

1 teaspoon of soft brown sugar

Handful of fresh coriander leaves
