Perfect mixture of sweet, spicy, sour, and salty, and soft/crunchy textures when you use a toasted hard tortilla shell. The sweet potato and beans are filling, and the dish is vegetarian and gluten-free, so not only is it bursting with flavor, but you feel great afterward.

Ingredients for 4 servings

2 sweet potatoes (really orange-fleshed yams), peeled and cut into small cubes

1 tablespoon olive oil

salt and red chili flakes to taste

juice of 1 lime

2 heaping cups shredded cabbage (I used a combination of purple and green cabbage)

1/4 cup finely diced yellow onions

2 heaping tablespoons chopped cilantro

juice of 2 limes

1 teaspoon olive oil

1/4 cup finely diced yellow onion

1 teaspoon ground cumin

1 (15-ounce) can black beans, drained and rinsed

small corn tortillas
