Crunchy Maple Slaw

This recipe has been entered in to the "Think Outside the Griddle" recipe contest. This delicious and healthy slaw is also wonderful with leftover duck in the wrap recipe titled "Duck Maple Slaw Wrap" (also posted) with a side of "Maple Cherry Cranberry Compote" (also posted).

Ingredients for 6 servings


1/3 cup fresh lime juice

4 T maple syrup

1 t soy sauce or ponzu

4 T canola or safflower oil


1/2 red cabbage, thinly sliced

1/2 Savoy or green cabbage, thinly sliced

1/2 jicama, julienned

1 cucumber, halved lengthwise, seeded and thinly sliced

2 fresh red chilies, seeded and finely diced

1/2 cup chopped flat leaf parsley

Optional Garnish

Peanuts, chopped

Red chili flakes

Chopped cilantro



Over medium high heat, place lime juice, maple syrup and soy sauce in a small saucepan. Reduce about ten minutes or until the mixture has thickened. Let cool and then whisk in oil. Add all remaining ingredients in to a large serving bowl. Toss with the reserved dressing and season with salt and pepper to taste. Garnish or add the optional ingredients as desired. Enjoy!
