Ingredients for 1 serving

1 cup baby spinach

1 tbsp slivered almonds

1/2 or 1 grilled chicken breast, pulled apart into bite sized pieces

Dressing:

1/4 cup extra-virgin olive oil

1/4 cup white balsamic vinegar

1 cup blueberries

2 tbsps honey

salt & pepper to taste

Preparation

1.

Mix spinach, chicken, and almonds together in bowl.

2.

Put all ingredients for the dressing in a blender, blend until smooth.

3.

Taste the dressing add more honey or vinegar if desired. Then pour over salad.

4.

Enjoy!
