Ingredients for 4 servings

1/4 cup white wine vinegar

1 teaspoon chopped garlic

3/4 cup olive oil

Juice of 1/2 a lemon

1 teaspoon honey, pomegranate syrup, or fig jam

salt

2 small or 1 large bulbs of fennel, washed, trimmed and halved

2 stalks celery, washed and trimmed

1/2 small celery root, peeled

Pomegranate seeds or orange segments, pith removed, for garnish (optional)
