3 x chiles de arbol, thinly sliced

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

Freshly ground black pepper to taste

12 x FOR THE ARTICHOKE-POTATO HASH --- baby artichokes

1 1/2 pounds Yukon Gold potatoes

Extra Virgin Olive Oil

4 cloves Garlic, unpeeled

1 x Bay Leaf

4 sprigs Thyme

2/3 cup sliced shallots

2 tbsp flat leaf parsley, chopped

1 x handful of Arugula, cleaned

Kosher salt and freshly ground black pepper, to taste

1 x FOR THE BLACK OLIVE AIOLI --- extra large egg yolk

1/2 cup grapeseed oil

1/2 cup Extra Virgin Olive Oil

1 x small clove of garlic

1/4 cup pitted oil-cured black olives

1/2 x Lemon, for juicing

pinch of cayenne pepper
