  • 2 lbs FOR THE STEAK -- Skirt Steak
  • 3 x chiles de arbol, thinly sliced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Freshly ground black pepper to taste
  • 12 x FOR THE ARTICHOKE-POTATO HASH --- baby artichokes
  • 1 1/2 lbs Yukon Gold potatoes
  • Extra Virgin Olive Oil
  • 4 cloves Garlic, unpeeled
  • 1 x Bay Leaf
  • 4 sprigs Thyme
  • 2/3 cup sliced shallots
  • 2 tbsp flat leaf parsley, chopped
  • 1 x handful of Arugula, cleaned
  • Kosher salt and freshly ground black pepper, to taste
  • 1 x FOR THE BLACK OLIVE AIOLI --- extra large egg yolk
  • 1/2 cup grapeseed oil
  • 1/2 cup Extra Virgin Olive Oil
  • 1 x small clove of garlic
  • 1/4 cup pitted oil-cured black olives
  • 1/2 x Lemon, for juicing
  • pinch of cayenne pepper
