Banana Bread With Chocolate Chip Covered In Chocolate Ganache

Ingredients for 12 servings

• 1 cup butter softened

• 2 cups sugar ( white)

• 4 eggs at room temp.

• 2 and ½ cups mashed bananas ( about 7 bananas)

• 2 teaspoons extract of vanilla

• 3 cups and 6 tablespoons of self-rising cake flour.( Presto)

• 1 teaspoons instant coffee.

• 1/4 cup unsweetened cocoa powder

• 1 cup sour cream

• 1 cup semisweet chocolate chips

• 1 cup heavy cream

• 1 cup chopped up semi-sweet chocolate.

Preparation

1. Preheat oven to 350 degrees F . Lightly grease two 9x5 inch loaf pans. 2. In a large bowl, cream together butter, sugar and eggs. Stir in bananas and vanilla. Sift in flour, instant coffee and cocoa; mix well. Fold in sour cream and chocolate chips. Pour batter into prepared pans. 3. Bake in preheated oven for 1hr and 15 minutes, or until a toothpick inserted into center of a loaf comes out clean. Check for doneness after 1hr. 4. Place the cup of the chopped chocolate in a small metal bowl Heat up heavy cream and pour over the cup of the chopped chocolate . Cover bowl , wait 5 minutes. Stir and whip until well incorporated. Pour ganache over the cooled loaves.
