Ingredients for 4 servings

small a bunch of fresh marjoram

3 tablespoons grated parmesan

3 tablespoons grated gorgonzola

2 tablespoons finely grated parmesan cheese

3/4 cup whole wheat flour

2 sprigs of thyme

1 tablespoon of butter

2 teaspoons of flour dissolved in the milk

2 egg yolks

1/2 cup of whole milk

3/4 cup all-purpose flour

2 pounds floury potatoes, unpeeled and pricked with a fork all over
