2 cups water

2 tablespoons fish sauce, or to taste

1 tablespoon sugar

2/3 cup fresh pineapple cubes

2 ripe Roma tomatoes, cut into wedges, then halved

1/4 pound medium shrimp, peeled and deveined

3 tablespoons fresh lime juice, or to taste

1 cup shredded cabbage

1 1/2 cups bean sprouts, preferably very fresh and white

2 Thai bird chiles, or 1/2 serrano chile, chopped (optional)

Salt to taste

2 green onions, thinly sliced

10 Asian or sweet basil leaves, sliced into 1/4-inch pieces

5 cilantro sprigs, coarsely chopped
