Ingredients for 2 servings

half of 1 small watermelon, sliced into wedges, with the rind removed

1 handful of toasted pepitas (pumpkin seeds)

salt and pepper, to taste

a handful of pretty salad leaves (I used a mix from my farmer’s market)

1 large stem of basil

1/4 cup of olive oil, plus more

2 ounces of feta cheese

10 large radishes, trimmed and quartered

10 garlic cloves

1 teaspoon of black peppercorns

2 cups of vinegar

1 teaspoon of kosher salt

1 teaspoon of sugar
