8 Ingredients

  • 2 lbs baby new potatoes – scrubbed and cut into even sized chunks
  • 1/7 oz container of Greek-style plain yogurt
  • 1 medium cucumber – seeded, peeled and cut into chunks
  • 1/2 medium red onion – thinly sliced
  • 1 small thai red chili – seeded and finely diced. substitute 1/4 tsp red chili flakes
  • zest of 1/2 a lemon
  • 1/4 cup roughly chopped mint, dill or parsley
  • Salt and freshly ground pepper
