I made this and it turned out horrible with the coarser cornmeal I used. I also tried to substitute the whole milk with almond milk because I was out of regular milk. Big mistake. Stick to fine cornmeal, or you'll end up with a crunchy, tooth-shattering cake.

1 1/2 cups unbleached all-purpose flour

1/2 cup instant or fine polenta

2 teaspoons baking powder

1 teaspoon kosher salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1 large Granny Smith or Golden Delicious apple

8 tablespoons (1 stick/4 ounces) unsalted butter, softened

2 tablespoons extra-virgin olive oil

3/4 cup granulated sugar

1/2 cup honey

2 large eggs

1 1/2 teaspoons pure vanilla extract

1/4 cup whole milk

Confectioners' sugar, for dusting (optional)
