I'm Spanish and I've eaten this thousand times. I've never used chicken stock/broth, and I know anybody who uses this. There are people who prefer Tortilla with or without onion, and well, except for the olive oil, I'd say that some ingredients don't need to be "so especific". I mean, potatoes, you can use other kind of "regular" potato (similar to this one); and eggs don't need to be organic.Enjoy it ;)

Ingredients for 8 servings

3 medium-sized Yukon Gold potatoes (about 1 1/2 pounds), peeled and quartered lengthwise

coarse salt (kosher or sea)

1 1/4 cups extra-virgin olive oil

1 small onion, quartered and thinly sliced

6 large, very fresh eggs, preferably organic

2 tablespoons chicken stock or broth
