  • 1 Tbsp vegetable oil, plus more for cooking roti
  • 1/2 Tbsp ground cloves
  • 1/8 tsp ground cinnamon
  • 1 tsp salt
  • 1 recipe West Indian Bread for Roti, recipe follows, breads kept covered and warm
  • 1/2 hot pepper, such as Scotch bonnet or serrano, seeded and finely chopped, or to taste
  • 1 chicken, cut into 8 pieces
  • 2 Tbsps ground turmeric
  • 2 cups chopped onion
  • 2 tsps minced fresh ginger
  • 1/2 tsp yellow mustard seeds
  • 1 Tbsp minced garlic
  • 2 tsps salt
  • 4 cups all purpose flour
  • 1 Tbsp light brown sugar
  • 2 sprigs fresh thyme
  • 1/2 tsp ground allspice
  • 2 Tbsps baking powder
  • 2 cups chicken broth
  • 1/4 cup vegetable oil
  • 1 Tbsp cumin seeds
  • 1/2 Tbsp garlic powder
  • 2 Tbsps finely chopped fresh cilantro
  • 1/2 Tbsp ground ginger
  • 1 cup water
  • 1 Tbsp crushed dried chili flakes
  • 1/2 Tbsp coriander seeds
  • 1/2 tsp ground black pepper
  • 1 can unsweetened coconut milk
