Ingredients for 4 servings

1/2 cup flour

Salt & freshly ground pepper

3 eggs

2 cups plain panko breadcrumbs

2 tablespoons olive oil

1 tablespoon chopped fresh thyme (or 1 1/2 teaspoon dried thyme)

1 tablespoon chopped fresh oregano (or 1 1/2 teaspoons dried oregano)

Zest of 1 lemon

Old Bay seasoning, to taste (optional)

1 1/2 lbs firm white fish filet such as tilapia or cod
