2 long slices (10-12 inches long) Poilane bread or other crusty artisan loaf

1 tablespoon herb oil, or more as needed (see Note)

4 ounces thinly sliced ham (the bistro used Bayonne ham but I used Fra'Mani lightly smoked ham)

1 great tomato from farmers' market, thinly sliced

6 ounces Asiago cheese, sliced thinly
