  • 1/2 cup salad oil
  • 1 ripe plantain peeled and cut into 1-inch cubes
  • 1/4 Tbsp chopped habanero, optional
  • Kosher salt and freshly ground black pepper

  • 1 onion, diced small
  • 1 cup salad oil
  • Smoked Tomato Vinaigrette, recipe follows

  • 1/2 cup rice wine vinegar

  • 6 (7 to 8 oz) tuna loins
  • 6 slices smoked bacon, diced
  • 4 eggs lightly beaten
  • 2 to 3 Tbsps salad oil
  • 2 Tbsps dijon mustard
  • Fufu, recipe follows
  • 12 ripe plum tomatoes halved crosswise
  • 1 Tbsp lemon zest
  • 1 cup julienne jicama
  • 1/2 red bell pepper, julienne
  • Chayote Slaw, recipe follows
  • 3 chayote, julienne
  • 1 Tbsp orange zest
  • 3 cups fine cornmeal
  • 4 tsps sour cream
  • 1 Tbsp lime zest
  • 1 seedless cucumber, julienne
  • 2 cups julienne green cabbage
  • 1 cup fresh corn kernels
  • Serving suggestions: fried plantains and grilled shrimp
  • 1 cup all-purpose flour
