1/2 teaspoon fine sea salt

1 teaspoon ground cinnamon

8 large apples, peeled, cored, and sliced 1/4 inch thick (3 1/2 pounds prepped)

Juice of 1 lemon

1/4 cup (2 ounces) unsalted butter

For biscuits:

2 cups (10 ounces) all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

2 cups (4 ounces) grated extra-sharp Cheddar cheese

1 1/3 cups cold buttermilk, or more as needed
