1 x english cucumber, peeled and seeded

1/4 x red onion, peeled and roughly chopped

2 x garlic cloves, peeled

Sea salt and pepper

1 tbsp chopped tarragon

2 tbsp sherry vinegar

1/3 cup olive oil

Dash of chili flakes

Reserved cucumber, diced

8 x cherry tomatoes, diced finely

2 x hard boiled eggs, crumbled

1 x ear of corn, blanched and kernels sliced off

1/2 x avocado, diced finely

1 small shallot, chopped finely
