3 lb. fava beans, shelled and skinned

Salt and freshly ground pepper, to taste

Freshly grated nutmeg, to taste

1 cup chicken stock

1 lb. fresh tagliatelle

1/2 cup mascarpone cheese, at room temperature

Grated zest of 1 large lemon

1/4 lb. thinly sliced prosciutto, cut into narrow strips

Large handful of fresh basil leaves, shredded

1/2 cup grated Parmigiano-Reggiano cheese
