I made this for Thanksgiving...the challenge: I had to make it 3 hours before serving it. Solution, under cooked by 10 minutes, covered and brought to home of host. Modifications of recipe: added 1/4 tsp all spice and orange zest to crust mixture. Next time: I will reserve 1 tsp maple syrup to bind topping ingredients a bit more. Very light and a perfectly healthy substitution for the typically sweeter rendition.

3 cups thinly sliced peeled Granny Smith apple (about 1 1/4 pounds)

1 teaspoon lemon juice

4 small sweet potatoes, peeled and thinly sliced (about 2 pounds)

1/4 cup maple syrup

1 tablespoon butter, melted

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray

2 (1-ounce) slices white bread

2 teaspoons olive oil

1/4 teaspoon ground nutmeg
