3 lbs chuck roast

1/4 cup olive oil or vegetable oil

2 cups beef broth (chicken works too)

1 tablespoon red wine vinegar

1 bay leaf

1/4 teaspoon ground cinnamon

1/4 teaspoon whole dried thyme

1 1/2 teaspoons salt , divided

2 medium onions , peeled & quartered

4 medium carrots , cut in 2 inch pieces

4 cups potroast beef broth

1/2 cup butter

1 1/2 cups whole berry cranberry sauce

1/4 cup diced celery

2 cups red wine

1 orange , peeled & quartered

1/4 teaspoon fresh ground black pepper

1 garlic clove , minced or garlic clove , pressed

1 cup all-purpose flour

2 whole cloves
