Great recipe. Try it grilled over salmon. Very nice indeed! I prefer it with less tomatoes. But either way it's quick and healthy! Try it with quinoa too.

try this ,,mangos diced...sweet red onions diced,,fresh squezzed lime juice,fresh chopped Tarragon,,diced pimentos,, sea salt,and diced red jalapenos,,add 1 tbl.soon Tequila..let rest 1 hour b-4 you use,,,from Chef Dennis in Cali....

1 Roma Tomato, 1/2" dice (@1/2 c)

1 T Cilantro (finely chopped)

1 t fresh Lime Juice

pinch of Sea Salt

1 tbsp Green Onions, finely sliced ~ optional

finely diced chilies ~ optional
