Ingredients for 2 servings

2 skate wings, evenly sized

1 tbs unsalted butter

Maldon Sea salt and freshly cracked black pepper

8 pieces of silver skin anchovies, chopped

1 clove of garlic, crushed

2 tbs capers, drained and chopped

80 g green olives, diced

100 g broccoli blanched very quickly and refreshed in ice water

100 g kale blanched and quickly refreshed in ice water

2 tbs chopped mixed tarragon, chives and parsley

½ green chilli, seeds removed and finely sliced

80 ml extra virgin olive oil

25 ml sherry vinegar

Juice and zest of one lime
