Ingredients for 4 servings

1 bunch cilantro, leaves chopped

1/4 cup grated Cotija cheese

2 bunches fresh cilantro

TOMATILLO SALSA

10 small corn tortillas, cut into 1/2inchwide strips

3 large jalapeno chilies, stemmed, seeded (optional), chopped

2 cups Tomatillo Salsa (see recipe)

1/2 cup cold water

3 garlic cloves, minced

2 cups chicken stock

1/2 cup crema

1 pound skinless boneless chicken breasts

1/2 medium onion, cut in half

2 teaspoons salt

1/4 cup finely diced onion

1 onion, chopped

2 tablespoons plus 1 cup vegetable oil

1 pound fresh tomatillos, husked, cut into quarters
