2 plum tomatoes , chopped, (6 oz/175 g total)

1/2 white onion , chopped

1 tbsp vegetable oil

1-1/3 cups basmati rice

1 pinch salt

1 ripe avocado

2 tbsp lime juice

1 green onion , sliced

1 pinch pepper
