I did try it with duck eggs and Kamut (though I was too apprehensive to use only Kamut so I added some all-purpose flour.). It turned out wonderfully especially after I purchased a simple pasta maker!!!

I was just thinking about this as I was grinding Kamut today. Farmer Z said the spinach is growing and will be in my CSA box soon. I'll have to try it with duck eggs too!
