Really good and healthy dish! Lacked a little bit of flavor. Will have to experiment with spices next time I make it. But it was good overall!

made some subtly changes based on my pantry's stock.used homegrown squash instead of zucchiniadded 1/4 tsp of cuminadded freshly minced garlictopped meal off with a sliced organic avocadothis meal was excellent, awesome combinations of textures :D

Ingredients for 4 servings

1 cup quinoa

1 cup canned black beans (rinsed)

1 cup chopped tomatoes

1 cup sliced zucchini

3 tablespoons olive oil, divided

2 tablespoons fresh lemon juice

1 teaspoon paprika

Kosher salt and freshly ground black pepper

4 tilapia fillets (about 1 lb. total)

1/3 cup sliced green onions
