1-1/3 cups frisee lettuce , watercress leaves or spinach

2 egg yolks

1 cup 18% cream

1/2 tsp salt

1/4 tsp white pepper

1 pinch nutmeg

1 pinch cayenne pepper

1/2 cup Gruyere cheese

1-1/2 cups all purpose flour

1/4 tsp salt

1/2 cup cold butter , cubed

3 tbsp Ice water

1 egg yolk

1 tsp vinegar
