1 lb lasagna sheet, fresh plain

1 medium Spanish onion , finely chopped

3 cups mozzarella cheese , shredded

Simple Tomato Sauce (use 2 cups)

1 medium summer squash, finely chopped

2 bay leaves

1/4 teaspoon fresh black pepper

1 medium zucchini , finely chopped

2 garlic cloves , chopped

1/2 cup parmesan cheese , freshly grated

3 tablespoons unsalted butter , halved

1 1/2 cups canned white beans, rinsed and drained

1 medium carrot , finely chopped

1/2 teaspoon salt

salt & freshly ground black pepper

2 (32 ounce) cans crushed tomatoes

1/4 cup extra-virgin olive oil

1 carrot , chopped
