2½ kg boneless lamb shoulder , excess fat trimmed

4 garlic cloves , sliced

20 black olives , pitted

3.0 tbsp olive oil

4.0 tbsp flour , well seasoned for dusting

350.0ml white wine

a small bunch flat-leaf parsley , chopped

4 carrots , peeled and diced
