1 head cauliflower – broken into florets

2 cans garbanzo beans – rinsed and drained

1 cup cherry tomatoes – halved or quartered depending on their size

3 green onions – green and white parts cut down to the root

2 tbsp. chopped basil

2 tbsp. chopped flat leaf parsley

zest and juice of 1 medium lemon

1/4 cup extra virgin olive oil

4 tbsp. red wine or white wine vinegar

1 tbsp. dijon mustard

salt and fresh ground pepper to taste
