1 cup Velveeta cheese

1 tablespoon cumin

2 (10 3/4 ounce) cans cream of chicken soup

1 cup onion , diced

2 (14 1/2 ounce) cans diced tomatoes

1 (10 ounce) can rotel

2 tablespoons oil

2 (10 ounce) packages frozen corn

3 (15 ounce) cans black beans , drained

1 (4 ounce) can green chilies , diced

3 cups cooked chicken, diced (I prefer grilled)

2 teaspoons salt (I like Lawry's Season Salt)

4 (19 ounce) cans enchilada sauce (3 mild, 1 hot)

1 tablespoon garlic , chopped

8 cups chicken broth
