1-3 tablespoon lemon juice , freshly squeezed (optional)

1/2 cup leek or shallot or onion , finely chopped

2-3 tablespoons fresh parsley , minced

1 1/2-2 cups vegetables, cooked (broccoli, mushrooms and asparagus are all good choices)

1 1/2 cups arborio rice

1/4 teaspoon saffron thread (optional)

1/2 cup parmesan cheese , freshly grated (optional, but recommended)

1 teaspoon salt

1 tablespoon olive oil

fresh ground pepper

1-3 teaspoon balsamic vinegar (optional)
