Ingredients for 6 servings

1 3/4 cups orzo pasta

1 pound unpeeled onions, coarsely sliced

4 cups chicken stock, preferably homemade

3 large cloves garlic, minced

1 leek, white part only, halved lengthwise and rinsed

18 juniper berries

2 whole unpeeled heads garlic, halved lengthwise

1/2 small bunch flatleaf parsley

1 tablespoon annatto seeds

4 cups water

20 black peppercorns

1 medium onion, minced

2 cups fresh or thawed frozen peas

4 ribs celery, with their tops, washed and coarsely sliced

1 medium carrot, washed and coarsely sliced

1 1/2inch piece unpeeled fresh ginger, coarsely sliced

1/2 bunch flatleaf parsley, leaves only, coarsely chopped

1/4 cup lard or olive oil

1 tablespoon paprika

Salt

2 teaspoons coarse sea salt

6 sprigs fresh tarragon

1 tablespoon Achiote paste (see Note), stirred together with 2 tablespoons water

2 whole jalapeno peppers

1 rabbit (about 3 1/2 pounds), rinsed, dried, and cut into serving pieces
