This salad is amazing! I used bell peppers instead of the peppers the recipe called for. (I just used what I had on hand). I will definitely be making this again. Next time I'll try it with the peppers!

Ingredients for 4 servings

2 cobs of corn

3-4 small zucchini (variety)

1 pint of padrón or shishito peppers

extra virgin olive oil

kosher salt and pepper, to taste

1 tablespoon of fresh basil, roughly chopped

1/2 tablespoon of fresh cilantro, finely chopped
