1 1/3 pounds hot or mild Italian sausage

1 onion, chopped

2 cloves garlic, chopped

1/4 cup dry white wine

1 1/2 cups canned crushed tomatoes in thick puree (from a 14-ounce can)

1 1/2 cups canned low-sodium chicken broth or homemade stock

1/2 teaspoon dried thyme

2 1/2 teaspoons salt

1/4 cup chopped flat-leaf parsley

1/8 teaspoon fresh-ground black pepper

4 1/2 cups water

1 1/3 cups coarse or medium cornmeal
