A great alternative to mayonnaise-based potato salad. I used herbs from my garden. My picky husband loved the salad, so this one is a keeper for me.

Ingredients for 4 servings

1 pound small white boiling potatoes

1 pound small red boiling potatoes

2 tablespoons of white wine

2 tablespoons of chicken (or vegetable) stock

3 tablespoons of Champagne vinegar

1/2 teaspoon of Dijon mustard

2 teaspoons of salt

3/4 teaspoon of freshly ground black pepper

10 tablespoons of good extra virgin olive oil

1/4 cup of minced scallions (both the white and the green parts)

2 tablespoons of minced fresh dill

2 tablespoons of minced flat-leaf parsley

2 tablespoons of minced fresh basil leaves
