1 small red onion

4 x cloves of garlic, minced

1 x jalapeno, seeded and minced

1/3 cup fresh cilantro, chopped

1 cup red bell pepper, chopped

juice of two fresh limes, roughly 3 plus Tablespoons

1/2 tsp grated lime zest

1/8 oz. can crushed pineapple in natural juice
