1 lime, juiced

1 jicama, peeled and shaved super thin

1 orange, sliced into thin rounds

1 small red onion, sliced into thin rounds

1 firm ripe Bosc pear, sliced thin

3 Tbsp Veganaise

1 tsp olive oil

1 Tbsp red wine vinegar

1 tsp sea salt

1 Tbsp maple syrup

generous amounts of fine black pepper (at least 1 Tbsp)

garnish: pepper, paprika and lime slices
