4 to 6 tablespoons ice cold water

4 tablespoons butter

6 medium apples (about 3 pounds), peeled, cored and thinly sliced

2/3 cup sugar

1/2 teaspoon salt

3 tablespoons flour

1 tablespoon freshly squeezed lemon juice

Heavy cream, to brush on top

Coarse sugar, for sprinkling on top (optional)
