Ingredients for 6 servings

1 1/2 pounds of squid, washed and cut into 1-inch pieces

2 3/4 cups of canned chickpeas, washed and drained

1 garlic bulb

1 teaspoon of smoked paprika

3 tablespoons of olive oil

1 onion, peeled and quartered

6 ripe and flavorful tomatoes (I used on-the-vine), seeded and chopped

3 bay leaves

7 ounces of fresh chorizo (removed from casing)

1 teaspoon of saffron threads

1 tablespoon of mint, chopped very finely

1 tablespoon of parsley, chopped finely

2 teaspoons of black peppercorns

sea salt, to taste
