I made this and it was delicious and light. The great thing is spring vegetables are in season so you have many choices to add or take away! I used only a pinch of the oregano. It's very strong and I love it but I loved the flavor of the veggies and I was able to taste it better. I loved this dish!

Ingredients for 1 serving

1 tsp olive oil

1 small onion, chopped

3 cloves garlic, finely chopped

14 oz can of chopped tomatoes

1 cup edamame

1 tsp dried oregano

1 cup cooked pasta

4 oz cooked chicken breast cut into thin strips

Dash of salt
