1/2 teaspoon sesame oil

1/2 red bell pepper , cut into 3/4 inch pieces

1/2 teaspoon cold water

3 tablespoons chicken broth

1 garlic clove , minced

2 tablespoons vegetable oil

salt and pepper

1/2 teaspoon sugar

1 shallot , minced

3/4 tablespoon rice vinegar

1/2 cup scallion, cut diagonally into 3/4 inch pieces

2 teaspoons gingerroot , peeled and minced

2 cups Brussels sprouts , trimmed and halved, if large, quartered

1 1/2 tablespoons soy sauce

1 large egg white

4 ounces water chestnuts , sliced thin, blanched for 30 seconds, cooled under cold water

6 ounces boneless skinless chicken breasts , cut into 3/4 inch pieces
