Lentil-Red Pepper Salad

2 cups cooked lentils, room temperature

juice and zest of one lemon

juice and zest of 1/2 lime

3 red bell peppers, roasted, skinned, and cut into small dice

1/2-1 small sweet onion, finely chopped (optional)

1-2 cloves garlic, finely minced (optional)

1 teaspoon smoked paprika

1/2 cup finely chopped herbs of your choice (I used parsley, basil and oregano from my garden.)

1-2 glugs, good olive oil, or to taste

salt and fresh ground pepper to taste

1 dash red pepper flakes (or more as needed for heat)
