The Stuffing

2 tablespoons butter

2 tablespoons extra virgin olive oil

3 shallots, minced

1/2 pound shiitake or portobello mushrooms, minced

1/2 cup dry white wine

1/4 cup chopped parsley

1 teaspoon fresh thyme leaves

2 cups coarse, dry breadcrumbs

1 egg

1 1/2 teaspoons salt

1 1/2 teaspoons freshly ground pepper

The Lamb

1 butterflied leg of lamb, about 4 to 5 pounds, trimmed to 2 to 2 1/2 inches thick

1 teaspoon salt

1 teaspoon freshly ground pepper

2 tablespoons minced fresh thyme

1 tablespoon minced fresh winter savory

1 tablespoon minced fresh rosemary

6 garlic cloves, peeled and slivered
