Didn't have millet flour on hand so I used 100g of regular flour, and I kept the quinoa flour and 65g of almond meal because I thought it'd taste wonderful with the apples. I used regular thyme instead of lemon thyme. After the cake cooled, I brushed it with a whiskey sugar glaze. If you need to unload some apples from pantry, this is a great recipe.

1 tbsp unsalted butter

3 x apples, peeled, cored and diced finely

1/2 cup blond cane sugar, plus 2 tbsps for the apples

1 x vanilla bean , split open and seeds scraped out

1 tsp finely chopped lemon thyme (optional)

4 x eggs

Pinch of sea salt

1/3 cup (80 ml) olive oil

100 g millet flour & brown rice flours

65 g (1/2 cup plus 2 tbsp) almond meal

40 g (1/3 cup) quinoa flour

2 tsp baking powder
